To ensure your temperature logs are legally binding, handheld probes must be verified monthly. Cold Standard: 0°C – 3°C (Ice Point). Hot Standard: 91°C – 98°C (Boiling Point, relative to altitude).

HFS MASTER TIP: If a thermometer deviates by more than 1°C from the reference, it must be removed from service immediately. Inaccurate probes can lead to the survival of Salmonella or Campylobacter during cooking processes.
