Poor oil management leads to the accumulation of Acrylamides and Polar Compounds. Daily Task: Filter oil to remove carbonized food particles. If the oil is dark, perform a TPM (Total Polar Materials) test immediately.

HFS SCIENTIFIC NOTE: Oil degradation is accelerated by salt and moisture. Overused oil contains high levels of free fatty acids which lower the smoke point and can produce harmful chemical byproducts. Discard oil if it fails a strip test or reaches 24% TPM.
