When a product is opened or prepared, the manufacturer’s original expiry date is no longer valid. The HFS Standard: Most high-risk foods (cooked meats, sauces, prepared salads) have a Day of Prep + 2 Days shelf life unless validated otherwise.

HFS PRO TIP: Never exceed the manufacturer’s original ‘Use-By’ date, even if the secondary shelf-life allows for more time. If a sauce is opened on Monday but its original expiry is Tuesday, it MUST be discarded on Tuesday.
