PREVENTATIVE DEFENSE: While professional contractors provide periodic inspections, daily and weekly internal monitoring is required to identify early signs of activity. Documenting “No Activity Found” is as critical as documenting a sighting for Due Diligence.
1. Rodent Monitoring (Mice/Rats)
Droppings in dry store/behind fridges?
Gnaw marks on packaging/cables?
Smear marks along skirting boards?
External bait stations intact?
2. Insect Monitoring (Crawling/Flying)
Cockroach activity (kitchen/drains)?
Flying insects (EFK catches high)?
Stored Product Insects (SPI) in flour?
Ant trails identified?
3. Proofing & Housekeeping
Fly screens intact and clean?
Internal/External doors close flush?
External bin area clean & tidy?
Gaps in brickwork/pipes sealed?
4. Contractor & Incident Log
HygieneFoodSafety PROTOCOL: If any evidence of rodents or cockroaches is found, the affected area must be isolated immediately, and an emergency contractor call-out must be triggered. Do not use domestic-grade pesticides in a commercial kitchen.
